You low down, no good, two timing.....PASTA?!???

Alright, got a little brave this week. I attempted two recipes simultaneously. Not such a good idea. For the main course, I chose Two-Timin' Pasta, with a side of Red Lobster Biscuits. The pasta wasn't too bad, except I over boiled it onto the stove top. I burned the biscuits. Just the bottom of them though. So we could still eat the top. Lewis wasn't quite as impressed this week. The pasta was really good, and Brody even loved it. Yeah, I'll try the biscuits again another day. What was edible tasted like red lobster biscuits. Overall, not an epic fail, but still needs some work. We'll try again next week. Obviously, I cannot cook two things at once.
TWO-TIMIN' PASTA:
(1)box penne pasta
24oz marinara sauce
15oz Alfredo sauce
(2)c shredded mozzarella cheese
(1)c shredded Parmesan cheese
-cook & drain pasta
-mix sauces together in a large bowl
-add the mozzarella & combine
-toss in penne & coat with mixture
-pour in 9x13 baking dish
-cook on 350 degrees for 20-25 min
-remove & sprinkle with shredded Parmesan
-bake for another 5 min.

RED LOBSTER BISCUITS:
(1 1/2)c bisquick
(1 1/2)c shredded cheddar cheese
(1/2)c milk
2 tbsp butter
1 tbsp oregano
(3/4) tsp garlic salt
-preheat oven to 400 degrees
-mix bisquick, cheese & milk together to form a sticky dough
-drop lumps of dough onto cooking sheet & bake for 10 min
-melt butter & mix oregano & garlic salt
-brush biscuits with butter mixture & bake for another 5 min

Lewis Likey!

After two weeks of just mediocre responses to my dishes, today's recipe was my first big hit! Woohoo!!! This weeks recipe was one from Pinterest. The Mexican Dorito Casserole. The only thing that threw me for a loop was the shredded chicken. How do you cook shredded chicken? Yeah, well, apparently you cook it, then shred it. I needed a covered casserole dish, which I did not own. So I went with Racheal Ray this time. The dish was super cute so that made it more fun. I was disappointed in the fact that her dish did not come with recipes. The Paula Deen dish came with 4 recipes. Come on, Racheal Ray! Let's step it up! Alright, with the cake & macaroni, Lewis really just tasted it. This dish is almost gone! Once you get the chicken shredded, it was supa easy. So here it is! If I can cook this & get an A+, I have complete faith that ANYBODY can do this. Here ya go:

1-preheat oven to 350 degrees
2-mix 2 cups shredded chicken, 1/2 cup milk, 1/2 cup sour cream, 1 can Ro-Tel, 1 can cream of chicken soup, 2 cups shredded cheese, 1/2 packet of taco seasoning
3-grease a 2qt casserole dish
4-start with layer of crushed Doritos, then layer with chicken mixture, another layer of Doritos, and the rest of the chicken mixture.
5-sprinkle with shredded cheese
6-bake for 35 minutes

Lewis hates Ro-Tel! He don't know he's eating it!!! Hahahahaha!

Here We Go Again...

Okay, 1st of all, I feel like I should say a few comments about last week's cake. Brody did not like it at all. Lewis said the middle was good. So that means I DID overcook the cake. Okay, okay..... That's what I'm working on. Also, I was told that I left chicken nuggets and toast off the 1st blogs burn list.
Anyway, let's move on. When I bought the Paula Deen dish for last week's recipe, it came with some more recipes. There was one for Mac 'n Cheese. Now, with all of my kitchen disasters being known, I will say that I can cook Mac 'n Cheese out of the box. Okay, this ain't like the boxed kind. It called for dry mustard. ?????? WHAT?? Well, just for future references, that can be found in the spice section. Overall, this wasn't too bad (once the dry mustard was located). I didn't even need the mixer this week.
Brody still hasn't tried any of it. Lewis says that the box kind is cheesier. So not sure if it's me or the recipe this time around. Week 2 in the kitchen, and no big hit yet!
My favorite pic from this kitchen adventure is of Brody "steering" the eggs. Random note: shredded cheese makes a terrible mess! Until next week....

Paula Deen's Creamy Macaroni & Cheese
(2) c. Uncooked elbow macaroni
(2 1/2) c. Grated sharp cheddar cheese
(3) eggs, beaten
(1/2) c. Sour cream
(1) 10.75 oz can condensed cheddar cheese soup
(1/2) stick of butter
(1/2) tsp salt
(1) c. Milk
(1/2) tsp dry mustard
(1/2) tsp black pepper

-preheat oven to 350 degrees. Spray 13x9 baking dish with cooking spray.
-boil macaroni until tender. Drain.
-return drained macaroni to pan and add 2 cups of cheese. Stir until melted.
-add eggs, sour cream, soup, butter, salt, milk, mustard, and pepper and stir well
-pour macaroni into prepared dish. Sprinkle remaining cheese on top. Bake for 40 minutes, until brown & bubbly

Round One!

Okay, my trip resulted in a stand mixer, measuring cups, ingredients and a Paula Deen baking dish. The dish only seemed necessary being that this was a Paula Deen recipe! I wanted a Kitchenaid mixer, but decided I would get it later if I become a master chef. So I got an Oster. It had good reviews so we will see.
I got all the ingredients out and organized. As you can see the Chugginton gang joined in the preparation. I'm pretty sure none of them ended up in the cake.
First lesson learned : WHEN MELTING BUTTER IN THE MICROWAVE, COVER THE BOWL!! Okay, I've got a messy microwave to clean up.
Second lesson learned : DO NOT FIGHT WITH THE MIXER. YOU WILL NOT WIN!!
I've posted pics of ingredients, utensils, crust and cake before baking, the cake baking(not sure what that weird bubble on one side is), the spatula that was thrown from the mixer( I did clean it off before using it again), and after pics.
Even after 50 minutes, the cake is super gooey. Not sure if it's the right consistency or not. This cake requires virtually no chewing. I'm pretty sure it's at least 1,000 weight watchers points per piece. I enjoyed wearing my apron. I bought it over a year ago because I thought it was cute. This was the first time using my spatula. It and the mixer do not like each other. I hope they can work out their issues because I am going to need that to go smoother next time.
On another note, I have to use the timer in the iHome dock because I don't know how to use the one on the oven.
Anyway, here's the recipe if anyone else wants to give it a try:
PAULA DEEN'S OOEY GOOEY BUTTER CAKE
Cake: (1)18.25 oz yellow cake mix package
(1)egg
(8)tblsp melted butter

Filling: (1)8 oz softened cream cheese
(2)eggs
(1)tsp vanilla
(8)tblsp melted butter
(1)16 oz box powdered sugar

Prep:
-preheat oven to 350 degrees
-combine cake mix, egg and butter and mix well with an electric mixer
-pat mixture in the bottom of lightly greased 9x13 baking pan
-prepare filling in a large bowl, beat cream cheese until smooth
-add eggs, vanilla and butter and beat together
-add powdered sugar and mix well
-spread over bake batter and bake for 40-50 min
-do not over cook as center should be gooey

If anyone else gives it a try, let me know your results! Until next week.....

Am I Really Doing This?

Okay, here's the deal. I am possibly the WORST cook ever! I have a 4 year old that loves to pretend and help cook. So I have taken it upon myself to try one new recipe a week. Hopefully, this will help with my kitchen lingo and skills(which are non-existence.) The blog is named "Kitchen Wrecker" because that is exactly what I do. I burn canned string beans, frozen pizzas, and can(a.k.a whop) biscuits. I catch oven mits on fire. Yeah, that's me. Anyway, I am setting out for ingredients and kitchen supplies in the morning. I don't even own a mixer. Sad? Yes, I know. Anyway, I am attempting Paula Dean's Ooey Gooey Butter Cake for the 1st week. So tune in tomorrow night to see if my kitchen still exists.
